KITCHEN KRONICLES - Roasted Peppers (Part 2)

In my last post I promised to share a sandwich recipe using roasted peppers.  I came up with one using tender chunks of chicken breast with arugula & the roasted peppers, slathering the bread with pesto mayo.  

Chicken, Arugula and Roasted Pepper Sandwich

Ingredients

3 tablespoons mayonnaise

1 tablespoon store bought jarred pesto

1/8 teaspoon black pepper

2 boneless, skinless chicken breasts

2 cups arugula

1/4 cup sliced roasted peppers

4 slices of your favourite bread, lightly toasted

Salt & Pepper for seasoning

1 teaspoon olive oil

Method

Combine first 3 ingredients in a small bowl, stir to combine and set aside.  Season chicken breasts with salt and pepper.  Meanwhile heat a large non-stick pan over medium-high heat and brush with oil.  Add chicken and saute until just cooked through, about 4 minutes per side.  Transfer to a plate, cool and cut into diagonal slices.  

Slather one slice of bread with reserved pesto mayo and cover generously with arugula.  Add half of sliced chicken, half of roasted pepper slices and more arugula.  Top with a second slice of bread slathered with pesto mayo.  Repeat process to make a second sandwich.  

The result was an explosion of flavours and textures….tender juicy chicken, sweet smoky peppers, herbacious pesto mayo with the spicy crunchy arugula.  Definitely a winner
